- 1 saucepan for cooking the rice
- 1 Baking tray
- Parchment paper
- 1 Peeler
- 1 small bowl for making the marinade
- 1 medium bowl for rinsing the rice
- 1 airtight container for marinating the tempeh
Ingredients
Marinade:
- 2 garlic cloves, grated
- 1 inch of peeled, grated ginger
- Zest and juice of one lemon
- 6 tbsp. soy sauce
- 5 tbsp. olive oil
- 4 tbsp. Maple syrup or honey
- 1⁄4 tsp. dried thyme
- 1⁄2 tsp. Chinese Five Spice
Poke Bowl:
- 3 cups tempeh of your choice
- 1 medium carrot
- 1 ripe avocado
- Lemon juice
- 1 cup long grain white rice
- 1 1⁄4 cup water for cooking the rice
- 1 tsp. lemon kosho or other fermented sauce of your choice
- Roasted sesame seeds or gomasio
- Fresh cilantro
Instructions:
Prepare the Marinade:
- Combine all marinade ingredients in the bowl.
- Cut the tempeh into 1.5 cm / 0.5 inch cubes.
- Place the marinated tempeh in an airtight container and refrigerate for at least 1 hour (preferably 3 to 4 hours, for maximum flavor). Shake occasionally.
Cook the Rice:
- Rinse the rice 2 or 3 times with clean water to remove excess starch.
- Drain and cook the rice in the saucepan with water, covered, for 15 to 20 minutes, until the water is fully absorbed.
Cook the Tempeh:
- Preheat the oven to 190°C (375°F).
- Line a baking tray with parchment paper.
- Spread the marinated tempeh cubes evenly on the tray and bake for 20 minutes, stirring halfway through cooking.
Prepare the Vegetables:
- Peel, wash, and cut the carrot into sticks.
- Slice the avocado and squeeze a little lemon juice over it to prevent oxidation.
Display the Poke Bowl:
- Place the cooked rice at the bottom of the bowl.
- Arrange the cooked tempeh, carrot sticks, and avocado slices on top.
- Sprinkle with sesame seeds, cilantro, and a dash of lemon kosho.
