Who could forget the summer of 2016, when our house was filled with the delightful fragrance of paleo rhubarb desserts, particularly this gluten-free honey rhubarb tart? I swear I consumed at least a dozen of these exquisite treats in the span of two months!

In search of perfection, I experimented tirelessly with variations on the gluten-free almond crust, different cutting methods for the rhubarb, and diverse baking techniques. Honestly, I emptied multiple bags of almond flour from Costco!

Despite my endless attempts to perfect this dessert, I can't help but crave another slice of this ethereal paleo rhubarb tart. The trickle of honey on top offers the perfect touch of sweetness to complement the tart rhubarb.

The combination of the elegant gluten-free crust, softened rhubarb, and sweet-tart flavor is nothing short of divine!

Let's Make it Happen

To create this simple, clean rhubarb dessert, all you need is almond flour, arrowroot flour, salt, maple syrup or honey, coconut oil, vanilla extract, rhubarb stalks, honey or maple syrup, and lemon. Follow the instructions below, and prepare to fall in love!

Equipment- Rectangular or round tart pan with removable bottom- Bowl (preferably handmade by Montreal-based Orlin Stoyanov of Maison Stoi)

IngredientsTart Crust- Almond flour (160 g)- Arrowroot flour- Salt- Maple syrup or honey (3 tbsp)- Coconut oil (3 tbsp)- Vanilla extract (2 tsp)

Rhubarb Filling- Rhubarb stalks (2 cups)- Honey or maple syrup (2-3 tbsp)- Lemon (zest of half a lemon)

Directions1. Preheat oven to 325F. Prepare the ingredients and oil or butter the tart pan.2. In a large bowl, mix the flours and salt. Add the remaining ingredients and mix until the dough forms. Chill the dough in the fridge for about 15-30 minutes.3. After chilling, roll the dough between two pieces of wax paper or plastic wrap into a shape that fits the tart pan. Place the dough into the tart pan.4. Arrange rhubarb stalks horizontally (rectangular pan) or going out like the spokes of a wheel (round tart pan). Drizzle with honey and lemon zest.5. Bake for 25-30 minutes, until the dough is golden and the rhubarb is softened. Allow the tart to cool before removing it from the pan.6. Enjoy your scrumptious gluten-free honey rhubarb tart!
